Fichet's aligoté vines are planted in Meursault, on the flatter land below the famous hillside. Aged in 6yo 600ltr demimuids for one year this is a balanced, zippy wine, with finely tuned fruit and good minerality.
Notes on the producer
Jean-Philippe began as a grower in 1981 and bottled his first wine age 20. Sadly a short-term lease on some Meursault Perrières came to an end in 1991, but this was offset by a little Puligny-Montrachet premier cru Les Referts that he took over in 1997 after the retirement of his father.
He now has a clutch of holdings in some of Meursault’s finest lieu-dits such as Tessons and Chevalières. Low yields are achieved in the vineyards through severe pruning, and in the cellar, JP believes in natural yeasts and long élevage (18 months minimum) without lees stirring in a combination of 350 and 500l barrels (no more than 30% new oak) for the first 12 months, followed by 6 months in stainless steel tanks so as not to tire the wines and preserve freshness and precision.
