Handpicked grapes from different parcels of both younger and older vines are wild fermented and aged in older barrels in the “ouille” style. Aromatic and lush with notes of zingy citrus, caramelised nuts and a pleasing butteriness.
Notes on the producer
White wine made from 100% Savagnin grapes grown on limestone, half of the vines are 60 years old, the other half were planted in 2003. Hand harvested, spontaneous fermentation in barrel and aged for one year in neutral barrels. `this has an unexpected richness. This is terroir driven savagnin at its finest.
Céline and Steve Gormally farm 5.5ha of vines in Passenan, scattered around 10 plots in five villages, including the prestigious Château-Chalon. Creating Les Dolomies – a reference to Passenans’ dolomitic rock, a salty magnesium-rich limestone – in 2008, the couple live above their cellar with their three young daughters. Extremely busy Céline and Steve grew tired of regularly battling against the INAO and its administration, and from 2017 onwards they renounced the Côtes du Jura appellation for the Vin de France designation (on all bottlings). Wild yeast fermentation and bottling without fining or filtration have always been the norm.
